More than a meal, this gathering was a deep dive into the identity, tradition, and soul of Northern Portugal. At the table, three women with powerful voices and deep knowledge came together:
- Researcher Olga Cavaleiro, who guided us through a cultural and emotional journey into the origins of the ingredients and left us reflecting: is codfish also Portuguese?
- Sommelier Catarina Telles de Menezes, who brought wines from small producers, sensitively paired with each dish.
- Chef Inês Diniz, from the iconic Casa Inês, who prepared classic recipes with mastery and memory.
We began with codfish fritters, olives, and broa de Avintes with olive oil and red wine vinegar — a welcome into tradition. Then, we traveled through three regional codfish dishes:
- Gomes de Sá-style, from Porto
- Braga-style, with deep Minho roots
- And the surprising codfish stuffed with cured ham, a traditional recipe from Trás-os-Montes
The dessert, Inês’s Aletria (Portuguese vermicelli pudding), sweetly closed a memorable afternoon.
But it was Olga who posed the question that lingered in the air and in our hearts: Why is codfish, which comes from so far away, so deeply ours?
And by the end, we all knew the answer: it’s in the way we treat it, cook it, and share it — that’s what makes it Portuguese. Because codfish, like us, carries history, affection, and identity.
A gathering that nourished us with more than flavors — with meaning.
